Cut kangkong into 3 inches long, using young shoots only. Clean and rinse it well.
Put chopped garlic, crushed hot pepper, soy bean paste, oyster sauce, sugar, and water into one bowl, to be ready for seasoning.
Set a pan or wok on high temperature, then put in the cooking oil, wait until the pan is very hot.
Pour in kangkong and bowl of mix seasoning together. Stir fry for 10 seconds or when kangkong turns bright green. Put on a plate and immediately serve with rice.
Cooking tip: Make sure pan is very hot, and stir fry for short time otherwise kangkong will not be crispy. Eating quality is good right after cooking. Hot pepper is optional.
