Veggie Salad

A good source of vitamins, minerals and fiber. A salad is one of the easiest recipes to make. There's no cooking involved so you can't go wrong. Prepare it in advance in the morning and store it in your refrigerator. Serve with bread and butter.

1 head of lettuce, torn into pieces
4 ripe, red tomatoes, sliced
2 cucumbers, sliced
2 carrots, julienned
1 cob or 1 small can sweet corn
2 boiled eggs, quartered
1 can of tuna, drained and flaked
½ cup croutons
½ cup peanuts or cashew nuts (add just before serving so that it’s still crispy)
¼ cup olives (optional)
Dressing on the side or add some salt and pepper to taste on top of the salad and add olive oil


Wash all the vegetables carefully with a lot of water.
Toss the lettuce, tomatoes, cucumbers, carrots, corn in a large salad bowl. Store in refrigerator.
Top the salad with boiled eggs, tuna, croutons, peanuts or cashew nuts and olives just before serving.
Place dressing on the side.
Variation:for a heavier salad, boil 3 medium potatoes and 1 pack of string beans, let it cool down and mix it with the other ingredients.
