Boil pork in 1 cup water or until tender. set aside pork stock.
Sautè garlic and onion in oil. Add shrimps and pork, stirring until done. Pour in pork stock. Cover pan. Continue cooking over medium heat until shrimps is done. Add ubod. Stir and simmer for 3-5 minutes. Season with salt and pepper according to taste. Transfer to a separate container. Allow to cool. Drain excess broth. Wrap with lumpia wrapper then fry until golden brown.
To prepare sauce:
Combine broth, sugar, soy sauce and salt. Boil for 2 minutes. Pour in dissolved cornstarch to thicken the sauce. Add minced garlic.
