Jufran Pork Mango Tango

Ingredients:


1/2 kilo pork kasim, pounded and sliced into 2 inches
cornstarch
GoldenFiesta Cooking Oil for deep frying

Marinade:
1 cup vanilla ice cream
11/2 tbsp. Datu Puti Patis
1/2 tsp. Jufran Hot Sauce
black pepper

For the Sauce:
1/2 piece white onion, sliced
2 tbsps. Golden Fiesta Cooking Oil
1/2 cup Jufran Sweet Chili Sauce
chicken stock or water
1/4 tsp. cinnamon
salt and pepper
1/4 cup mango puree
3/4 cup ripe mango, sliced into cubes


Procedure:
1. Marinate pork in vanilla ice cream, Datu Puti Fish Sauce, Jufran Hot Sauce and black pepper overnight.
2. Dredge in cornstarch and deep fry in Golden Fiesta Cooking Oil until crispy or golden brown.
3. For the Sauce: Saute onions in Golden Fiesta Cooking Oil. Add Jufran Sweet Chili Sauce, chicken stock or water and cinnamon.
Adjust seasoning. Turn off heat, add mango puree.
4. Toss in deep fried pork and mango with the sauce. Serve.

TIPS:
IDEAMAKER - You can use canned lychee or canned peaches for this recipe instead of mangoes
SKILLBOOSTER - adding the mango puree off heat retains the fresh taste of the mango
BUDGETKEEPER - You can use chicken leg & thigh instead of pork kasim
TIMESAVER: deep fry in advance then just toss in mango and sauce just before serving
