To make pandan cream: combine pandan, water and sugar in a saucepan. Let boil and strain. Let cool and add to chilled cream. Transfer to a squeeze bottle.
Prepare 4 chilled glasses. Place a scoop of crushed ice in each serving glass then add 2 scoops of ice cream.
Arrange caramel popcorn and glazed nuts then drizzle with pandan cream. Garnish with mint leaves. Serve right away.
