Sauté chorizo in 1 tbsp olive oil until some fat comes out. Add garlic, onion and the red chopped bell pepper. Then the ground pork. Stir and cook until pork is done. Add green peas, raisnins and pickle relish. Simmer for 2 minutes. Season with paprika, salt and pepper. Let it cool. Add bread, fresh egg & chicken flakes. Mix well. Stuff the chicken with meat mixture, then the hard boiled eggs. Put in the red bell pepper strips which will in turn provide sort of a pattern when sliced to serve. Sew the opening then cook in oven or turbo broiler at 350F for 45 minutes. Put in a platter. Reserve the juice & oils extracted from the chicken. Serve with sauce & hot rice.
Saute onions, celery and carrots on the remaining olive oil. Add tomatoes & the juice and oils extracted from the chicken. Then the sugar,salt and pepper. Simmer on low heat for 30 minutes. For a smoother texture, blend it.
