1 cup (244 g) multi-colored sago pearls, cooked
1 can (234 g) DEL MONTE Pineapple Crushed, well drained (reserve syrup)
1/2 cup sugar
1 cup coconut milk
6 cups (54 g) cornstarch
2 tbsp pineapple syrup
2 tbsp (18 g) cheese
2 tsp (6 g) rind of 2 calamansi or dayap


1. COMBINE all ingredients, except sago. Mix thoroughly until sugar and cornstarch are dissolved. Cook over medium heat, stirring continously until mixture thickens.

2. ADD sago. Continue cooking for about 15 minutes. Pour over greased mold. Cool. Unmold and serve chilled.

Maja Blanca ( Coconut Pudding)

A Spanish inspired Filipino dessert made primarily from coconut milk, usually served during fiestas and holidays.
