Ingredients:
8 slices (1000 g)fish (maya-maya, labahita, etc.) 1 pc (50 g) medium onion, cut into rings 1 tbsp (7.4 g) ginger strips 1 pc (100 g) small carrot, cut into strips 1 pc (50 g) medium red bell pepper, cut into strips 1 can (439 g) DEL MONTE Pineapple Tidbits 1 cup (240 g) water 1 tbsp (15 g) DEL MONTE Red Cane Vinegar 1/3 cup (90.33 g) DEL MONTE Original Blend Ketchup 3 tbsp (45 g) sugar 1 tbsp (18 g) cornstarch 1/2 tsp (3.5 g) iodized fine salt or iodized rock salt 1/4 tsp (0.8 g) pepper 1 cup (220 g) cooking oil for frying 2 tbsp (28 g) cooking oil, for sautèing
Procedure:
SPRINKLE fish with 1/2 tsp iodized fine salt (or 1-1/2 tsp rock salt) and 1/4 tsp pepper. Fry until golden brown. Set aside. SAUTÉ onion, ginger, carrot and bell pepeper. Add all the remaining ingredients. Simmer while stirring for 5 minutes. Adjust taste if desired. Pour over fried fish.
