2. HEAT olive oil and fry meat until brown on all sides. Add ¼ cup water and remaining ingredients (except carrots and cornstarch).
3. COVER and simmer over low heat for 2 hours. Add carrot. Simmer until tender. slice meat and transfer to a platter. Thicken sauce with dissolved cornstarch. Pour over meat.
