Air Dried Marinated Beef

Take 1 to 2kg Top Side or Silverside Beef.
Cut into 1cm thick strips along the grain.
Make a Salt Marinate Mixture of 1 Cup of Rock or Sea Salt mixed with 2 or 3 tablespoons of Crushed Black Pepper. 3 Tablespoons Crushed Coriander Seed. Add a small amount of BBQ spice for flavour but not required.
Take 1 Cup Brown, Malt or Cider Vinigar and mix with half a cup of Woestershire souce and pour over meat. Mix well.
Sprinkle Salt Mixture over meat and mix well.
Leave over night to marinate.
Take meat out, dip in hot or boiling water to take of extra salt mixture and it also helps to seal the meat.
Hang them up on hooks on a wire in a room where there is good ventilation or you can also use a fan.
