Ingredients:
2 tablespoons olive oil
2 onions minced
1 chicken cut into 8 pieces
2 carots sliced
8 potatoes cut into cubes
2 garlic cloves
2 preserved lemon cut into slices
150 g pitted green olives
1 teaspoon cumin powder
25 cl chicken stock
1 tablespoon fresh coriander or parsley chopped
Salt, ground pepper

In a tagine dish, or a casserole, heat the oil and fry the onions 3 min.
Add the chicken and seal until the pieces are browned on all sides (7 min). Add the carots, potatoes, garlic, lemon, olives and the cumin.
Pour the chicken stock and stir well. Cover with the lid and cook gently for 40 min.
Sprinkle the coriander and serve.
