The Barolo Nebbiolo grapes and Barbaresco Nebbiolo grapes are still fermented in medium-sized wooden vats. Ageing lasts three years and takes place in oak barrels hidden away in our cellars where the temperature is the same all year round.
Produit à partir du cépage Chardonnay (appelé localement Gamay blanc), ils peuvent être également assemblés avec du Savagnin. Il vieilli pendant plusieurs années en fûts de chêne, il acquiert la finesse et la puissance de son bouquet. Servi à peine chambré, il peut accompagner poissons, crustacés, viandes blanches, fondue, plats en sauce et fromage de Comté.
