500 g salt cod 600 g of potatoes 2 laurel leaves 2 cloves of garlic pressed into puree 150 ml olive oil 300 ml of milk Pepper
The evening before : soak the cod in a big bowl of cold water for at least 12 hours, changing the water regularly
On the day : Boil the potatoes for 15 min. During this time, poach the cod for 10 min in a sauce pan of boiling water with the laurel. DO NOT SALT Pre heat oven to 210° (th 7) Strain and break up the cod, taking out the bones. Place in a big bowl, add the garlic. Warm the oil and add it, little by little to the fish, mix as for a mayonnaise. Warm the milk. When the potatoes are cooked, press with a masher, adding the milk little by little. Mix cod and potatoes, add pepper and put in the dish Place the dish in the warm oven about 25 min until the top is crispy.
