Ingredients:
2 tbs olive oil 1 onion (diced) 1 clove garlic (diced) 1 red pepper (diced) 1 yellow pepper (diced) 1 small aubergine (cut into small cubes) 1 courgette (cut into small cubes) 2 tomatoes (sliced) 12 black olives 4 eggs 20 cl liquid cream Salt, pepper 1 ready made shortcrust pastry
Heat the oil in a frying pan, then add the onion and cook 3 min till transparent. Stir in garlic, cook 1 more min then add peppers, aubergine and courgette. Cook 20 min over low heat, stir while cooking.
When the vegetable is tender season to taste with salt and pepper. Pre-heat oven to 200°C. Line a buttered pie plate with pastry. Arrange the slices of tomatoes on the on the crust and spoon the cooked vegetables and the olives on top. In a bowl, whisk together the eggs and the cream. Pour the egg mixture over the vegetable. Set the pie in the hot oven and bake for 35 to 45 minutes, or until set and lightly browned. A knife inserted into the center should come out clean. Can be eaten hot or cold.
