l leg of lamb (1.8 kg) 4 cloves garlic cut in 2 1 big onion minced 8 large potatoes peeled and sliced 2 bay leaves 1 sprig of thyme 25 cl beef stock Salt and ground pepper
Preheat oven to 200°
Start by making deep incisions all over the leg of lamb using a small knife and insert garlic into the incisions. In the roaster, place the onion and the potatoes, add the bay leaves and the thyme and pour the stock around. Season well. Put the lamb on top of the potatoes and roast for 1h15 min. Turn off the oven, and leave the dish 10 min, then cut the lamb into generous slices.
