Ingredients:
3 bell peppers (3 different colors if possible) 3 globe squash 3 tomatoes 1 glass basmati rice 2 glasses of water 500 g grounded beef 1 big onion chopped 1/2 tea spoon cumin 1 tablespoon parsley chopped 1 egg Salt, pepper
Cut a cap off the top of the vegetable. Using a teaspoon, scoop out tomato pulp, seeds of peppers and squash pulp
Preheat oven to 210°. In a saucepan, place rice and water. Gently boil till all the liquid is absorbed (about 15 min). Meanwhile, in a large bowl, mix the beef, the onion, cumin, parsley and egg. Season well and add the cooked rice. Stuff the vegetable with the mixture, replace the cap on the vegetable. Place the stuffed vegetable in a dish and cook in hot oven for 35 min. Serve hot or cool with a green salad.
