Loin of lamb

Ingredients:
1 loin of lamb (800 g)
1 tablespoon olive oil
1 big onion chopped
4 tomatoes chopped
2 garlic cloves
100 g green olives stoned
1 glass of white wine
Thyme, bay leaves
Salt and grounded pepper
Preheat oven to 210°
In a frying pan, heat the oil and fry the onion. Add the tomatoes, garlic, olives and white wine. Season well and cook gently for 10 min.
Pour the preparation in a roasting dish and place the lamb on it. Sprinkle with thyme and bay leaves.
Cook in hot oven for 30 min.
Serve immediately with fresh pasta or grilled vegetable.
