French Crème brulée

Ingredients:

40 cl heavy cream
1 vanilla bean
5 egg yolks
75 g caster sugar
4 tablespoons brown sugar


Split the vanilla bean lengthways. Place the cream and the vanilla bean into a medium saucepan and bring to boiling.
Then remove from the heat, Leave to infuse for five to ten minutes.

Preheat the oven to 100°.

In a bowl, whisk together the egg yolks and the caster sugar until it starts to lighten in color. Remove the vanilla bean from the cream and pour in the bowl stirring continually.

Pour the preparation into 4 ramekins. Bake in hot oven for 45 min.

Remove the ramekins from the oven and refrigerate for at least 2 hours.

Just before serving, spread 1 tablespoon of brown sugar on each ramekin. Using a torch, melt the sugar and form a crispy top.

You can also place the ramekins under the grill of the oven (keep an eye on them, and remove them as soon as the color turns brown).
