Ingredients:

6 pav¨¦s de bar, 500 g de pur¨¦e de pommes de terre, 5 cl de jus de viande, 2 cl huile de truffe, 24 rondelles de truffes, Huile d¡¯olive, sel, poivre, 3 feuilles de brick, Agar©agar, Cr¨¨me liquide


Confectionner une purée de pommes de terre, la terminer à la crème, ajouter l'agar agar et faire bouillir. Ajouter l'huile de truffe, mettre en siphon et gazer.
Prévoir la moitié d'une feuille de brick frite par personne et la rouler en tube. Cuire les pavés de bar à l'huile d'olive, les assaisonner.
Dressage : Dresser en assiettes chaudes. Remplir les tubes de purée au siphon. Saucer les truffes dans le jus de viande, les disposer puis les saler légèrement.
