Tartare de saumon et crumble de tacos

Ingredients:

Pour le tartare : Saumon : 1 filet, 20 olives noires, 20 tomates séchées, 1 citron vert, 2 citrons confits, Ciboulette, Huile d’olive, sel, poivre
Pour le crumble: 150 gr de beurre, 150 gr de farine, 150 gr de poudre d’amande, 1 oeuf entier, 200 gr de tortillas pulverisées, Épices : curry, cumin, cardamome, Sel poivre, Mettre le beurre en pommade


Confectionner le tartare avec le filet de saumon, couper les garnitures en brunoise, Assaisonner le tartare à l’huile d’olive, sel et poivre
Pour le crumble: Dans un bol mélanger farine, poudre d’amande, sel, poivre, tortillas puis les épices. Incorporer le beurre et l’oeuf. Mélanger puis mettre au réfrigérateur. Mettre sur plaque et cuire au four à 180 ° pendant 3 minutes.
Dressage : Mettre dans un cercle le tartare, ajouter le crumble sur le dessus, puis accompagner d’une salade juste sel et olive.
