Ingredients:
1 kg big shrimps ½ cup vinegar ¼ teaspoon of Fil – Choice Annatto powder 1 pack Fil – Choice Coconut Milk (400mL) 2 cloves garlic, crushed 1 teaspoon black pepper, powdered ½ cup onions, finely sliced 2 pcs tomatoes, diced 1 cup Dagupan Bagoong Guisado some green finger chili some pork lard or cooking oil some sliced eggplant or okra as extender
In a saucepan, heat pork lard or cooking oil and add ¼ teaspoon Fil – Choice Annatto powder. Stirring constantly until oil has absorbed the coloring of annatto powder.
Sautee garlic, onions, tomatoes and bagoong. Add shrimp, vinegar, eggplant or okra and green finger chili. Simmer for 5 to 10 minutes. Turn heat to medium and pour in 1 pack of Fil – Choice Coconut Milk 400mL. Continue to simmer, stirring continuously until coconut milk thickens. Serve with hot steamed rice.
