Ingredients:
1 kilo Pork belly, cut into chunks
3 tomatoes, sliced
2 onions, diced
1 cup coconut meat, strips
100g. Kangkong
100g. String beans
2 pcs horse radish, sliced diagonally
3 pcs gabi, peeled
2 pcs green hot pepper
3 tbsp fish sauce or salt
1 L. coconut water
Tamarind juice, extracted from boiled 200g tamarind
Put coconut water in a casserole, add pork, onions, tomatoes, tamarind extract and fish sauce. Boil until meat is tender. Add the gabi. Simmer for 3 minutes. Add the horse radish, green hot pepper and string beans. Simmer again for 2 minutes. Put the kangkong & coconut meat. Simmer for 1 more minute. Season to taste. Serve hot with rice.
