Crispy Dinuguan with Puto

Ingredients:
1/2 kilo pork liempo, cut into cubes
2/3 cup sugarcane vinegar
1 pc. large onion, chopped
1 pc. small garlic, minced
1/2 cup pork blood
1 1/2 cups water
2 teaspoon sugar
1 tablespoon patis
2 pcs. green hot pepper
1/4 kilo Lechon Kawali
2 tbsp. cooking oil
1/2 cup water(for boiling pork liempo)
* salt to taste
Procedure:
Mix pork blood with vinegar, water & sugar. Boil for 5 minutes. Set aside.
Boil pork liempo until tender. Set aside.
Saute garlic & onion in a saucepan. Add pork liempo & patis. Simmer until pork liempo turns slightly brown. Add the blood mixture and green hot pepper. Simmer for 3 minutes. Season to taste. Add the lechon kawali before serving. Serve it with puto.
For Tidtad or Pampanga's version of dinuguan, let the pork blood clot, slice into cubes then mix it with the boiled pork before sauteing.
