Ingredients:
1 kilo ox shank, cut into serving sizes
1/4 kilo ox tripe, cut into serving sizes
2 medium sized eggplant, cut diagonally
1 banana heart sliced diagonally
1 bunch of string beans
1/2 head of cabbage or pechay
1 cup peanut butter
4- cloves garlic, minced
1 big onion sliced thinly
2 tbsp cooking oil
Procedure:
Boil meat in pressure cooker for 20 minutes or until meat is tender. Set aside.
Saute garlic & onions. Add meat followed by the broth. Boil for 5 minutes. Add the vegetables and peanut butter. Cook for 3 minutes more or until vegetables are cooked & sauce becomes thick. Season to taste.
Serve with shrimp paste.
