Bagoong Alamang (Shrimp Paste)

Ingredients:
500g Fresh Alamang, cleaned & drained
1/3 cup Salt
2 tbsp Cooking oil
3 tbsp Vinegar
3 tbsp Sugar
2 pcs hot pepper(optional), chopped
2 cloves Garlic
1 medium sized Onion
Procedure:
Combine alamang & salt, mix well. Store in an air tight container for 5 days.
Put alamang in a skillet, add vinegar & cook until dry. Cooking alamang in vinegar will remove its fishy odor & taste.
Saute garlic & onion. Add alamang, hot pepper & sugar dissolved in 1 tbsp water. Stir occasionally until done.
