Ingredients:

1 medium size onion, quartered
1/2 head garlic, crushed
1/2 tsp. shrimp paste (bagoong)
1 tbsp. peppercorns, crushed
2 tbsp. worcestershire sauce
10-12 c. beef/pork stock
1 tbsp. sugar
1 tsp. soy sauce
salt to taste

1 kilo mami noodles
12 c. beef/pork broth (you can also use beef cubes or pork cubes)

Toppings
250 g.lechon kawali
150 g. pork liver, sliced into serving pieces
150 g. shrimps, shells and heads removed
1 pc. chicken breast, cut into strips

Garnishing
chicharon, crushed
garlic, chopped & fried
spring onion, chopped


Procedure:

Pour broth in a large pot, add the first 9 ingredients and bring to a boil. Add in chicken in the pot, let simmer for 15 minutes or until chicken is tender. Add in pork liver and simmer again for another 5 minutes or until liver is cooked. Add in shrimps and simmer for 1 minute. add more stock if necessary. Remove chicken, shrimps and liver from the pot, drain and set aside. Continue simmering the broth in low heat. Season with salt.

Place noodles in serving bowl and pour strained boiling stock over the noodles. Top with lechon kawali, chicken strips, liver and shrimps. Garnish with chicharon, spring onion and fried garlic.
Serve hot
