Ingredients:
1 cup shrimps, shells and head removed 2 lbs chicken, boiled & cut into strips 4 cloves garlic, minced ½ tbsp black pepper, grounded ½ cup annatto seeds(Atsuete) soaked in ¾ cup water 6 tbsp fish sauce 4 tbsp cooking oil 1 medium size onion, sliced thinly 4 cups chicken stock Dumplings: 2 lbs ground pork 1 ½ cups water chestnut or singkamas, grounded 2 packs wonton wrapper ½ cup green onions, sliced thinly 1 pc egg 1 tbsp salt Garnishing ¼ cup toasted garlic Green onions, chopped
Procedure:
Dumplings Mix well all the ingredients of dumplings in a bowl. Wrap a spoonful of the mixture in wonton wrapper. set aside. Saute garlic, onion, chicken and shrimps. Add fish sauce, annatto water and chicken stock. Let it boil. Add the dumplings. Simmer for ten minutes or until dumplings are cooked. Season with salt and pepper. Garnish with green onions and toasted garlic. Serve hot.
