Special Kulawo at Tinapa ( Tinapa Topped Eggplant)

Ingredients:
2tbsp Golden Fiesta cooking oil 2tbsp UFC Banana Catsup 1tbps minced garlic 1 cup sliced onion rings ¾ cup tinapa flakes 1pc bird’s eye chili, chopped 1 cup coconut crème 1/2tsp sugar 5pcs eggplant 5pcs calamansi or 1pc lemon, halved 1/2tsp minced ginger 1 tbsp Datu Puti spiced vinegar (pinakurat) 1tsp Nelicom patis
Procedure:
For Tinapa Sauté garlic, ginger, tinapa, chili and vinegar. For Coconut Crème: Boil coconut crème and sugar, simmer until thick. Add 1 tbsp spiced vinegar, 1/2tsp garlic, 1/2tsp ginger and 1tsp patis. For Eggplant: Roast eggplant until skins are charred. Peel eggplant while still hot. Squeeze calamansi over eggplant. Pour coconut crème over eggplant and top with cooked tinapa. Serve with hot steamed rice.
