Seaside Binakol (Seafoods & Chicken in Coconut Creme)

Ingredients:
1tbsp Golden fiesta coking oil 1tsp minced garlic 1tsp julienned ginger 2 pcs UFC chicken broth cubes, dissolved in 2 cups water 1 cup coconut creme 1/2 cup chicken meat, cubes 1/2 cup water chestnuts (singkamas) strips 1/2 cup shrimps, unpeeled 1 cup halaan (clams) 2 pcs green pepper 1 1/2 Datu Puti Fish Sauce 1tbsp Jufran sweet chili sauce salt & pepper to taste 2 pcs fresh buko(young coconut in shell with top chopped off & water removed) 2 cups coconut water 1 fresh green bamboo tube
Procedure:
Visayan Way of Cooking: Put all ingredients together inside the fresh green bamboo tube. Cover the bamboo tube end to end, tight enough so that it will not leak. Place the bamboo tube over low fire until cooked. Serve hot with rice. Luzon Way of Cooking: Saute garlic, ginger, chicken and fish sauce in oil. Add chicken stock, coconut creme, sweet chili sauce and coconut water. Boil for 10 minutes or until chicken is tender. Add water chestnuts, halaan, shrimps & green pepper. Simmer for few minutes. Season with salt & pepper. Pour into buko shells & serve immediately with steamed rice.
