Clean the fish, season with salt then fry in hot oil until golden brown.
Combine all the sauce ingredients except the slurry. Boil for a minute. Add slurry and simmer until sauce thickens. Set aside.
Saute garlic, ginger, onion, carrots and bell pepper. Stir fry for 2 minutes. Add pineapple chunks then the cooked sauce. Simmer for another minute.
Put fried fish in a big flatter. Pour the sauce mixture on top of fish. Serve with hot steamed rice.
