Sweet and Sour Fish

Ingredients:
1 kilo fish fillet or 1 whole big lapu-lapu, tilapia, red snapper, etc. 1 cup cooking oil for frying 2 medium Bell Pepper (red and green) 1 pc. onion, sliced 1 pc. Carrot, cut into strips 1 small can pineapple chunks, drained 2 tbsp minced ginger 1 Tbsp minced garlic 2 tbsp cooking Oil 2 stalks green onions, cut into 1" long Salt Sauce: 1/2 cup catsup 2 1/2 tbsp Soy Sauce 2 tbsp Sesame Oil 1 cup water 1 cup sugar pineapple chunks syrup 3/4 cup Vinegar 1 1/2 tbsp Cornstarch and 1 1/2 tbsp Water (slurry)
Procedure:
Clean the fish, season with salt then fry in hot oil until golden brown. Combine all the sauce ingredients except the slurry. Boil for a minute. Add slurry and simmer until sauce thickens. Set aside. Saute garlic, ginger, onion, carrots and bell pepper. Stir fry for 2 minutes. Add pineapple chunks then the cooked sauce. Simmer for another minute. Put fried fish in a big flatter. Pour the sauce mixture on top of fish. Serve with hot steamed rice.
