Ingredients:
1 kilo pork belly, cut into cubes 2 tbsp minced garlic 2 pcs. onion, sliced 1/2 cup vinegar 6 bay leaves 1/2 cup soy sauce 1/2 cup brown sugar 2 cups rice water 1/2 tbsp black pepper, grounded 2 tbsp salted black beans (optional) Cooking oil
Procedure:
Marinate pork in soy sauce and pepper for 1 hour. Remove from the marinade. Set aside. Saute garlic, onion, pork and bay leaves. Stir fry until pork turns slightly brown. Add rice water & boil until pork is tender and almost dry. Add vinegar. Simmer for few minutes, add the brown sugar stirring once in a while. Simmer again until sauce slightly thickens. Season to taste. Serve hot with rice.
