Ingredients:
1/2 kilo bangus belly, cut into 2" x 3" approximate 1/2 cup young coconut strips 1 tbsp. unsalted butter 2 cloves garlic, chopped 1/2 cup coconut water 2 tbsp. oyster sauce cooking oil for frying salt Marinade: 2 cloves garlic. minced 2 tbsp. soy sauce 1 tsp. black pepper, grounded 2 pcs kalamansi Garnishing: Cucumber and tomato slices
Procedure:
Mix all the ingredients of marinade in a bowl. Marinate bangus belly in the marinade mixture for 20 minutes. In a wok, brown the chopped garlic in oil. Set aside. Fry bangus belly in oil used in browning the garlic . Set aside. Add the coconut water, oyster sauce and butter in the oil where bangus belly was fried. Stir cook until the liquid forms into an oily sauce. Add the young coconut strips, bangus belly and the browned garlic. Simmer for 5 minutes stirring occasionally. Season with salt. Serve hot with steamed rice.
