Pork Binagoongan

Ingredients:
1/2 kilo pork liempo, sliced into 1" x 1/2"
3 tbsp Oil
2 tbsp Minced garlic
1 pc. Onion, chopped
¼ cup Alamang
2 tbsp. Vinegar
3/4 cup Water
3 pcs eggplant, cut into halves and fried
Ground black pepper and sugar to taste
Procedure:
Boil pork in 1/2 cup water or until meat is tender.
Heat oil in a saucepan. Saute garlic and onions until softened. Add pork and saute until light brown in color. Add alamang, vinegar and 1/4 cup water. Let simmer (do not stir) and cook until liquid is reduced. Season with pepper and sugar if desired. Continue to cook until mixture caramelizes. Top with fried eggplant.
Pork Binagoongan is a Filipino specialty made from Pork and Shrimp Paste.
