Ingredients:
300g cooked beef brisket, sliced 250g cooked ox tripe, sliced 1 1/2 cup glutinous rice (malagkit) 50g ginger, sliced 1 large onion, sliced 5 tbspn cooking oil 2 litres of homemade beef stock 500ml water 1/4 tsp ground turmeric 1/4 tsp ground black pepper 50ml fish sauce Toppings 5 cloves garlic, chopped & fried Fresh chives or shallots, chopped Crispy fried tofu cubes Boiled egg
Procedure:
Wash the glutinous rice, drain well and set aside. Sauté ginger, onions, beef brisket and tripe in oil you used in frying the garlic. Stir fry for 2 minutes. Add turmeric and pepper, then the fish sauce. Simmer for a minute. Add the glutinous rice. Stir until the rice soaks up the liquid in the pan. Pour in the beef stock and water. Boil while stirring occasionally to avoid burning until the glutinous rice is cooked. Serve with toppings and a dash of powdered pepper, fish sauce & a squeeze of calamansi.
