Ingredients:
1/4 kilo Bihon (Rice Sticks) 4 tbsp atsuete (annatto juice) 1/4 cup shrimps, boiled and peeled Patis (Fish sauce) 2 cups shrimp juice or broth 4 tbsp flour or cornstarch Water Toppings: Hard boiled egg; sliced Fried tinapa flakes (smoked fish) Pork chicharon, crushed Chopped fried garlic Spring onions, chopped Shrimps, boiled and peeled Lemon or kalamansi, sliced
Procedure:
Soak bihon in water for 10 minutes. Drain and set aside. Sauce: Combine atsuete juice, shrimp broth, and flour and patis. Boil, stirring constantly to produce a thick sauce. Set aside. Blanch bihon in boiling water. Drain and set aside in a platter. Pour the sauce over the noodles. Garnish with toppings. Serve hot.
