Sinampalukang Manok - Chicken Stew in Tamarind Soup

Ingredients:
1 kilo chicken, cut into serving pieces 1 medium-sized onion, sliced 2 tomatoes, sliced 1 cup string beans; cut 2" length 1 medium-sized radish, sliced 8 pcs okra, tips removed 1 bundle kangkong (potato vine) tops 5 cloves garlic, crushed 1 root ginger, crushed 2 cups tamarind tops, flowers or fruit(wrapped in cheesecloth) or tamarind mix 6 cups water Fish sauce (Patis) Salt to taste Cooking oil
Procedure:
Sauté garlic, ginger, onion, and tomatoes in a casserole. Add chicken and stir fry until chicken turns light brown. Add patis or fish sauce. Pour enough water, then add the wrapped tamarind tops and flowers. Boil until chicken is tender. Add string beans, radish and okra. Simmer for a minute. Strain and squeeze the cheesecloth, then remove from the casserole, or add tamarind mix If you use tamarind mix. Season with salt to taste. Cook until done. Serve hot!
