Ingredients:
1 kg (1000 g) fresh squid, ink sac removed 1 tbsp (16.2 g) calamansi juice 4 cloves (20 g) garlic, crushed 1 pc (30 g) small onion, chopped 100 g (100 g) ground pork 100 g (100 g) singkamas, chopped 1 pc (50 g) medium red bell pepper, diced 1 pouch (250 g) DEL MONTE Original Style Tomato Sauce 4 cloves (20 g) garlic, crushed 1 pc (50 g) medium onion, sliced 1 pc (50 g) small carrot, sliced 2 tbsp (26 g) DEL MONTE Banana Ketchup 2 tsp (6 g) all purpose flour, dissolved in 1 tbsp water
Procedure:
1. MARINATE pusit in calamansi juice, 1/3 tsp iodized fine salt (or 1 tsp iodized salt) and 1/4 tsp pepper for 30 minutes. Remove eyes, then chop squid heads and set aside. 2. SAUTÉ garlic, onion, pork and chopped squid heads. Add singkamas, bell pepper and 1-2 tbsp of DEL MONTE Tomato Sauce. Season to taste. Cook until almost dry. Fill each squid with 2 tbsp of this mixture. Secure with toothpicks if necessary. Set aside. 3. SAUCE: SAUTÉ garlic and onion. Add remaining DEL MONTE Tomato Sauce, DEL MONTE Banana Ketchup, carrot and 1/2 to 1 cup water. Season with soy sauce, salt and sugar to taste. Simmer for 10 minutes. Add squid and flour, simmer for 5 minutes.
