Chicken Ala Marsala

Ingredients:

4 pcs. of Fresh Options chicken breast fillet (skinless)

1 cup of dry red wine


3/4 cup all-purpose flour


1 tsp. of sea salt


1 tbsp. of whole ground oregano


1 tsp. of whole peppercorns (crushed)


1/2 cup fresh or canned button mushrooms (about 12 whole pieces)


50g of butter
extra virgin olive oil


Procedure:

Mix together the flour, salt, peppercorns and oregano in a shallow bowl. Coat chicken fillet in the flour mix. Melt butter in oil over medium heat in a large pan. Place chicken in the pan and cook until light brown. Turn over chicken fillet and add mushrooms. Pour in red wine and cover skillet. Simmer chicken for 10 minutes, turning once, until no longer ink and juice runs clear.
Best served with risotto rice, mashed potatoes or any pasta of your desire.
