Ingredients:
3 pcs hard boiled chicken eggs, shells removed 1 1/2 tbsp cornstarch 1/2 cup water 1 tbsp annatto oil (atsuete) 1/2 cup all-purpose flour 1/4 tsp salt 1/4 tsp ground black pepper 1 cup cooking oil
Procedure:
Mix all the ingredients (except eggs & cooking oil) in a mixing bowl. Drop the eggs in the mixture. Scoop the eggs, one at a time then deep fry until coating becomes crispy. Serve with spiced vinegar. Tokneneng is a popular street food in the Philippines which is also served in some restaurants. It is a boiled duck or chicken egg coated with batter then fried. Quail eggs can also be used in this recipe, we call it Kwek- kwek. Tokneneng & kwek - kwek are usually served with spiced vinegar.
