Papaitan ( Beef Stew in Bitter Soup)

Ingredients:
1/4 kilo ox tripe (boiled in water with salt) sliced thinly 1/4 kilo cow’s small intestine (boiled in water with salt) sliced 1/4 kilo beef, thinly sliced 1/4 kilo cow’s heart, sliced thinly 2 tbsp bile 1/4 cup ginger strips 1 medium- sized onion, diced 6 cloves garlic, crushed 8 cups water 4 pcs green hot pepper 3 tbsp patis 1/2 tbsp ground black pepper 1/3 cup calamansi juice or lemon juice 2 tbsp cooking oil
Procedure:
Saute garlic, onions, ginger, beef, heart, tripe And intestines. Add patis. Cook for 5 minutes. Add water then boil until meat is tender. Add bile, green hot pepper and black pepper. Simmer for 5 minutes. Add calamansi juice or lemon juice, Simmer for a minute. Adjust taste if desired. Serve hot with steamed rice.
