Ingredients:

5 medium-sized eggplant, grilled & peeled
1 medium-sized onion, diced
2 medium-sized tomatoes, diced
3 eggs, beaten
2 tbsp oil
salt


Procedure:

Saute onion & tomatoes. Add eggplant and stir cook for 5 minutes. Season with salt. Add beaten eggs stir cook for a minute or until egg is cooked. Serve immediately.
