Sinanglao (Beef Stew in Clear Broth)

Ingredients:
1/2 kilo beef, sliced 1" x 1/2"
2 cloves garlic, crushed
1 thumb-sized ginger, cut into strips
2 medium-sized onions, sliced
3 tbsp patis
peppercorns
salt to taste
calamansi juice (optional)
Procedure:
Saute garlic, onions, ginger, patis and beef until light brown. Add water and boil until beef is tender. Season with salt and peppercorns. Serve hot with calamansi juice (if desired) and steamed rice.
Sinanglao is a recipe originated in Northern Luzon. The original sinanglao uses beef tripe, beef heart, intestines, coagulated beef blood and spleen.
