Bagnet (Ilocano Style Pan Fried Pork Roast)

Ingredients:
1 kilo pork belly. whole cut, cleaned
2 heads Philippine garlic, crushed
1 tsp. black pepper, whole
1 tbsp salt
1 bay leaves
cooking oil for deep frying
Dipping Sauce:
1.) KBL Sauce - a mixture of the following:
3 medium-sized Kamatis (tomatoes) sliced
3 tbsp bagoong (fish Sauce)
2 medium- sized Lasona (onions) sliced
2.) spiced Ilocos vinegar (naturally fermented sugarcane vinegar
Procedure:
Put pork belly in a sauce pan, add water, black pepper, garlic, bay leaves & salt. Boil until tender. Remove from pan, drain & let it cool.
Heat oil in a frying pan and deep fry pork in low heat for 30 minutes. Remove from frying pan, drain excess oil, set aside and allow to cool.
Reheat oil in frying pan and deep fry the pork again in a moderate heat until golden brown and blisters appear on the pork rind. Drain excess oil. Chop into serving pieces & serve with dipping sauce.
