Imbaliktad (Flipped or Half-Done Meat)

Ingredients:
1/2 kilo fresh pork chops or beef, whole, 1 inch thick
1 pc. pork liver
1 onion, finely chopped
1 thumb-sized fresh ginger, finely chopped
10 pcs, kalamansi/lemon, juiced
2 bird's eye chilli, chopped
A little vinegar ( use suka ti Ilokos for a better taste)
Salt to taste
Procedure:
Grill the meat and the liver until half-done. Slice into serving pieces. Add the other ingredients, mix well. Serve with hot steamed rice.
