Ingredients:
1 kilo Cabagan noodles 1 tbsp oil 1-1/2 tsps garlic, minced 1/4 cup pork liver, sliced 1 cup boiled chicken strips 1 cup squid rings 1/2 cup shrimps, shelled 1/2 cup carrot strips 1 cup string beans, thinly sliced 1/2 cup soy sauce 5 cups chicken stock salt and pepper to taste Slurry: 1/3 cup cornstarchdissoled in 1/4 cup water Toppings: 2 cups crushed chicharon 10 pcs quail eggs, boiled and shelled Condiments: Choose from any of the following. spiced vinegar catsup soy sauce fish sauce calamansi
Procedure:
Blanch noodles. Drain well and set aside. Saute garlic, pork liver, chicken, squid and shrimps in a pan for a few minutes. Add the vegetables, cook until half done. Remove mixture from pan, leaving the sauce in the pan. Set aside. Add soy sauce and stock to the sauce left in the pan. Bring to a boil. Thicken with slurry. add meat & vegetable mixture then the noodles. Season with salt and pepper. Toss well. Serve with chicharon& quail eggs on top accompanied with condiments. Pancit Cabagan is a signature noodle recipe of Isabela province in Northern Luzon, Philippines. The dish is made of stir fried noodles, meat, seafoods and vegetables with thick sauce, topped with crushed chicharon (pork rind) & quail eggs. The dish is served hot with condiments on the side like spiced vinegar, catsup, soy sauce & fish sauce mixture or calamansi (lemon).
