Pancit Batil Patong/ Pancit Ybanag/ Pancit Tuguegarao

Ingredients:
1 kilo fresh pansit, washed and drained 1 cup Brocolli flowerets 1 cup Carrot strips 1 cup Snow peas, tips removed 1/2 kilo Cabbage, sliced 1 cup Togue (mongo sprouts), cleaned 1/4 kilo pork, sliced 1/4 kilo carabeef (water buffalo meat), sliced 1 large Onion, sliced 10 cloves garlic, crushed 6 cups Water or meat stock 1 1/2 cup Light Soy Sauce Pepper 2 tbsp oil Toppings: 8 pcs eggs, cooked sunny-side up 1/2 kilo lechon carajay, sliced Egg Soup: 8 eggs, beaten 8 cups water 1 cabbage, sliced 1 pack magic sarap granules 1/3 cup cornstach slurry salt to taste
Procedure:
Boil pork and carabeef until tender. Set aside. Saute garlic, onion, pork and carabeef in a pan until light brown. Add soy sauce then 1 cup water or stock. Bring to a boil. Add vegetables then cook until half done. Remove from pan, leaving the sauce from the pan. Add water then the pansit. Cook, stirring occasionally until done. Toss in the vegetables & meat mixture. Mix well. Season with pepper. Serve with lechon carajay on top and sunny-side up eggs, with calamansi and egg soup on the side. For the egg soup: Boil water in a pan. Add cabbage, cook until half done. Add slurry. Simmer for a minute. Season with magic sarap and salt. Add beaten eggs. Stir and remove from fire immediately.
