Ingredients:
250 gms. miki (whole wheat flour noodles)
1/2 cup boiled chicken meat, flaked
1 cup bagnet (lechon carajay), sliced
3 cloves garlic, crushed
1 medium-sized onion, sliced
1/4 cup atsuete (annatto) juice
1/2 cup green onions, chopped
2 tbsp fish sauce
pepper
salt to taste
Procedure:
Saute garlic, onions, fish sauce & chicken or shrimps until light brown. Add water, bring to a boil. Put the miki noodles. Simmer for 5 minutes or until noodle is half-cooked. Add annatto juice and pepper. Season with salt to taste. Top with bagnet and chopped green onions before serving. Serve hot.
Miki is a signature noodle recipe of Ilocos region in Northern Luzon, Philippines. It is usually served as breakfast or soup dish during rainy days. It is prepared from whole wheat flour noodles.
