Kilawen nga Kalding (Goat Ceviche)

Ingredients:

1 kilo goat’s meat with skin, cleaned
3 medium-sized onions, sliced
3 thumb-sized ginger, chopped
3 bird's eye chili, chopped
Vinegar or calamansi juice (lemon)
Salt and pepper

Marinade:
vinegar with salt


Procedure:

Marinate goat's meat in vinegar for 1 hour then grill until done. Slice thinly. Add the remaining ingredients. Toss. Serve.
