Creamy Carrot Soup - Excellent source of Vitamin A - for good eyesight.

Ingredients:
3 pc (450 g) medium carrot
2 tbsp (28 g) margarine
1 pc (11 g) beef bouillon cube
5 tbsp (42.5 g) all purpose flour
1 can evaporated milk, mixed with 5 cups water
1 pouch (115 g) DEL MONTE Original Style Tomato Sauce
1/4 cup (28.75 g) cheese, grated (optional)
2 stalks (30 g) green onion, chopped
1/3 tsp (4 g) iodized fine salt, cut into strips
Procedure:
1. BOIL 2 carrots until soft. Peel and mash. Set aside. Cut remaining carrot into small cubes. Set aside.
2. MELT margarine in pan. Add bouillon cube, then add flour gradually with continuous stirring. Add milk mixture gradually while stirring until well blended. Add cubed carrots. Cover and simmer for 10 minutes.
3. ADD DEL MONTE Tomato Sauce, mashed carrot, cheese, 1/3 tsp iodized fine salt(or 1 tsp iodized rock salt) and 1/4 tsp pepper. Simmer for another 5 minutes. Top with green onions.
