SINAMPALUKANG MANOK (Chicken Stew in Tamarind Soup)

Ingredients:

2 tbsps Cooking oil
1 tbsp Garlic, crushed
1 pc Onion, sliced
1 pc Ginger, small, pounded and sliced
1 pc Tomato, sliced
3 cups Chicken, cut into serving pieces
1 tbsp Patis (fish sauce)
3 cups Water
2 tbsps Mama Sita’s Sinigang (Tamarind Seasoning) Mix
1 cup Sitaw (long green beans)
1 pc Sili (long green pepper)


COOKING INSTRUCTIONS

In a saucepan, heat oil. Sauté garlic, ginger, onion and tomato.

Add the chicken, stir-fry and season with fish sauce.

When the chicken is almost done, add water and bring to a boil.

Add Mama Sita’s Sinigang (Tamarind Seasoning) Mix, long green beans and long green pepper. Continue cooking until the vegetables are done.

Serve with fish sauce.



What is Sinampalukang Manok?

Sinampalukang manok or sinampalukan (from sampalok, Filipino word for tamarind) is a delicious Filipino sour soup, main course, similar to sinigang, but not a variation of sinigang. What makes it different is, the chicken in sinampalukan is sauteed in ginger, garlic and onions first before stewing. While in sinigang, you stew directly the meat or fish together with the other ingredients. Another difference is, shredded young tamarind leaves and flowers are used to sour the soup of sinampalukan while in sinigang, tamarind fruit or other sour fruits are used.
